People Desserts from Scotties and Airedales!

The Rocky Creek Scotties really know how to live! This recipe was great served over sherbet and we spooned it over warm french toast the next morning! That was to die for!!
Double-Duty Salsa

1 pint strawberries, hulled and coarsely chopped
1 cup coarsely chopped fresh (or frozen) pineapple
1/2 cup coarsely chopped mango or peach
1 tsp. finely shredded lime peel
2 tablespoons lime juice
1 tablespoon honey
1/2 tsp grated fresh ginger
1/4 tsp. cracked black pepper

Combine all ingredients. Cover and chill at least 2 hours or up to 24 hours.

Serve over a scoop of raspberry sherbet. Garnish with a round of Walkers Scottish Shortbread.  Perfect warm weather treat!

Just look how happy they are, just thinking about PIE!


It was soooo easy and really yummy. We made this when Dad's sister and her daughter came to visit. When we all came home from the beach, we scarfed the pie right up! It was a big HIT!

Whip Cream Pie

Crush with a rolling pin, 14 Pecan Sandie brand cookies between 2 pieces of wax paper or inside a platic bag. Sprinkle the crumbs into a 9" pie pan and even them out.

Whip 1/2 pint of whipping cream until stiff. Slowly pour 1 can of Eagle Brand Milk on top of the whip cream. Add 1/3 cup fresh lemon juice to the whip cream -Eagle Brand Milk mixture and continue beating till light and fluffy.

Pour this mixture into the Pecan Sandie pie crust and refrigerate for 3 hours.

(We decorated the top with lemon zest shavings...since we had the lemon anyway. Next time we are going to decorate the top with wild blackberries!)

Ryker's Fresh Apple Cake

This was really good. We can't wait til our apples are ripe and we will make this recipe again. Thanks Ryker!

Fresh Apple Cake

3 large eggs
2 cups sugar
 2 tsp. vanilla
1 1/2 cups vegetable oil
1/2 tsp. cinnamon
2 tsp. salt
1 tsp. baking soda
3 cups all purpose flour
3 cups diced apples
1 cup chopped walnuts

Preheat oven to 325 F, spray pan with Pam for baking or grease and flour Bundt pan.
Mix oil, eggs, sugar and vanilla until blended. Stir into dry mixture. Add apples and nuts. Pour batter into pan. Cook for 90 minutes.

Sauce for cake:
Combine 1 cup light brown sugar, one stick butter, 1/8 tsp. salt and 2 tablespoons milk. Heat and stir for 5 minutes, but do not bring to a boil. Serve warm over cake. Cake is very good with or without the sauce.

Mr. Pip's Pasta with Smoked Salmon and White Beans

We want to give it to every doggie that sent us a recipe, because not only are you good dogs, but good cooks too. Now that is VERSATILE!

This recipe will definitely be enjoyed at our house often.
We have already made it twice!
Pasta with Smoked Salmon and White Beans

1 pound bow tie or penne pasta
2 cloves garlic
2 tablespoons dijon mustard
1/4 cup red wine vinegar
1/4 cup fresh lemon juice
6 tablespoons olive oil
2 tablespoons sour cream
1 pound (or less) smoked salmon
1 15 ounce can white beans
1/3 cup chopped fresh dill
1/3 cup chopped fresh parsley
1 small red onion chopped (saute or raw)
ground black pepper
1/2 cup parmesan cheese

Bring a large pot of water to a boil. Add pasta and cook until tender. Drain immediately and transfer to a large mixing bowl.

While pasta is cooking, make the dressing. Place garlic in a food processor, pulse until chunky. Add mustard, vinegar, and lemon juice, and process until combined. Gradually, add oil and sour cream.

Pour dressing over pasta. Add salmon, beans, parsley, dill and red onion. Mix together. Add pepper and Parm. cheese. It is best when chilled for an hour or so!!

My momster really likes this the next day for lunch too...make a big batch!!

I loved all the recipes for dog treats and dog dinners, but this one takes the cake.

DOG RECIPE
Peanut Butter and Carrot Birthday Cake with Yogurt Frosting
1 cup white or wheat flour
1 tsp. baking soda
1/4 cup peanut butter
1/4 cup vegetable oil
1 cup shredded carrots
1 tsp vanilla
1/3 cup honey
1 egg

Preheat oven to 350 degrees F (180 C)
Mix together flour and baking soda.
Add remaining ingredients and mix well.
Pour into a ring mold (we used a 9" single cake pan), sprayed with nonstick spray.
Bake 40 minutes.

Frost this cake with low fat cottage cheese or yogurt and decorate with carrot pieces. Store in refrigerator.
People Recipe
George the Lad's Welsh Cakes

Ingredients
125g of butter
250g of self rising flour
75g of castor sugar (super fine)
Pinch of mixed spices
100g of currants/sultanas/raisins
1 egg beaten

Method
Mix together the butter and flour
Add the egg
Put the sugar, spice and fruit into the mixture
Put the mixture into the fridge to cool for 30 minutes
Roll out the mixture to 1 cm thick
Cut into circles
Cook the cakes in a frying pan or on a bakestone WITHOUT using oil or butter until they are browned on both sides.
Sprinkle with sugar and serve.
Best when warm or reheated in microwave!
